Blini

20 minutes, plus 1 hour rest

Ingredients

  • 250 g all-purpose flour (2 cups + 1 tbsp)
  • 250 ml water
  • 250 ml milk
  • 3.75 g instant yeast (1 tsp)
  • 3.75 g salt (1 tsp)
  • 10 g sugar (1 tbsp)
  • 17.5 g oil (1 tbsp + 1 tsp)
  • 1 egg

Method

  1. Whisk the flour, yeast, salt, and sugar together in a large bowl.
  2. Add the water, milk, egg, and oil, and whisk until the batter is smooth and lump-free.
  3. Cover and let stand at least an hour so the yeast can proof. Don’t skip this.
  4. If the batter seems thick, thin it out with a splash of water or milk.
  5. Heat a lightly oiled non-stick pan over medium-high heat. Pour in a thin layer of batter, swirl to coat, and cook until the top sets and the edges brown. Flip, give the second side a few seconds, and slide it out.
  6. Play with the temperature. It varies with stoves and pans.
  7. Repeat with the rest of the batter, stacking as you go.
